We have a few light and easy meal ideas for you. Greenleaf Gourmet's Executive Chef Kristi Ritchey is showing off her new, light 400 calorie pizzas, demonstrating how you can make them at home.

Summer is here, and with the warm weather we’ve got a few light and easy meal ideas for you. Greenleaf Gourmet’s Executive Chef Kristi Ritchey is showing off her new, light 400 calorie pizzas, demonstrating how you can make them at home. The BBQ Chicken Pizza and the Burrata Heirloom Tomato Pizza were on today’s menu. It’s a fun and different way to use your Barbeque this summer.

These are a part of Greenleaf’s new menu rollout. The Pizzas available on this menu from Greenleaf are:

BBQ Chicken Pizza with Mozzarella- Thin Crust

Truffled Mushroom with Goat cheese & Arugula

Spicy Turkey Sausage with fennel and ricotta

BLT with avocado pesto, baby tomatoes, and turkey bacon

Burrata Heirloom and Pesto Pizza

Greenleaf has four locations, Beverly Hills, Century City, and in Costa Mesa located on 17th Street, and in South Coast Design Center.

Greenleaf offers a health focused menu with custom made gourmet salds, sandwiches, pizzas, soups, fresh juices, and hot entrees with fresh, locally grown ingredients. Flame grilled proteins, and countless toppings.

1)   A native of Williamsport, PA, Chef Ritchey first caught the cooking bug while working at a small, traditional Italian restaurant in the city. The owner of the restaurant saw so much potential in her that he urged her to pursue a professional career in the culinary arts.

2) After attending culinary school at Pennsylvania College of Technology, Chef Ritchey relocated to California's Napa Valley, where she first landed a cooking position with Restaurant Pinot Blanc, the area's flagship restaurant from Chef Joachim Splichal's Los Angeles-based Patina Group. There, under the tutelage of Chef Greg Stillman, Chef Ritchey was promoted to the position of Sous Chef in less than a year.

3) To this day, Chef Ritchey credits Chef Stillman as one of the greatest positive influences on her cooking style and philosophy. From Pinot Blanc, the Patina Group relocated Chef Ritchey to Palm Springs, for the opening of Eat at The Desert in the chic Hotel Zoso and then soon thereafter she was asked to assist with the opening of the company's Eat on Sunset with Chef Gary Menes.
