Bread Winner's Southwest Turkey Chop Salad with Chili Cumin Vinaigrette

Layer the Following Ingredients

Romaine 3 cups

Turkey, diced 4 ounces

Cherry Tomato ½ cup

Black Beans, rinsed and chilled ¼ cup

Roasted Corn ¼ cup

Jack Cheese, shredded ¼ cup

Chili Tortilla Strips ½ cup

Flour Tortilla, grilled 1 each

Grilled Lime ½ each

Chili Cumin Vinaigrette (see recipe) 3 ounces

Chili Cumin Vinaigrette

Yield: 1 ½ cups

Shelf Life: 72 hours (3 days)

Egg Yolk 1 each

Red Wine Vinegar1/3 cup

Garlic Powder ½ teaspoon

Chili Powder ½ tablespoon

Cumin ½ teaspoon

Cayenne Pepper pinch

Kosher Salt ½ teaspoon

Black Pepper ¼ teaspoon

Salad Oil1 cups

Combine all ingredients except salad oil in a food processor or blender and blend. With the machine running slowly add salad oil in a thin stream until all oil is incorporated and the dressing is creamy.
