Chicken with Avocado - Lemon Yogurt Sauce

Ingredients

FOR THE AVOCADO-LEMON YOGURT SAUCE

2 each avocados, ripe, cut in half and seeded

2 tablespoons lemon juice, freshly squeezed

¼ cup cilantro leaves, picked

½ cup plain yogurt, halved

1 teaspoon kosher salt

FOR THE CHICKEN

8 pieces chicken breast, skinless and boneless

2 tablespoons olive oil

1 tablespoon cracked black pepper

1 tablespoon kosher salt

FOR THE GARNISH

2 each avocados, cut in half, seeded and peeled

8 slices red tomatoes, 1/2 inch thick

8 slices yellow tomatoes, 1/2 inch thick

1 pound cottage cheese

4 tablespoons olive oil

1 tablespoon cracked black pepper

8 sprigs sweet basil


Method

FOR THE AVOCADO - LEMON YOGURT SAUCE:

1. In a blender, blend together the avocado, cilantro, lemon juice and half of the yogurt until smooth.

2. Transfer the sauce to a mixing bowl and incorporate the remaining yogurt.

3. Season with kosher salt and set aside.

FOR THE CHICKEN:

1. On a cookie sheet marinate chicken breasts with olive oil and season with cracked black pepper and kosher salt.

2. Grill over an open fire until chicken is done. Do not over cook.

3. Remove chicken breasts from grill and set aside until you are ready to slice. Chicken should rest for about 3 minutes.

4. Arrange chicken breasts equally on eight plates.

FOR THE GARNISH:

1. After the chicken has been arranged on the plate, evenly spread the avocado sauce around the chicken.

2. Garnish with pieces of avocados, tomatoes and cottage cheese. Season the cheese with olive oil, cracked black pepper and basil.
