GoodDayCafe: Classic risotto with Michael Friedman of The Red Hen

This is a great version of a classic ‘risotto’ made with the first tomatoes of the season. Look for tomatoes that are soft to the touch, but not wet or soggy. When cutting tomatoes, always use a serrated knife – it will go through the fruit very easily and leave you with little cleanup. The risotto holds well in the refrigerator and can be reheated with a touch of water and more parmesan.

Tomato Risotto
Makes 3-4 servings

~6 cups vegetable stock (or water)
~2 tablespoons olive oil
~1 ea onion, minced
~1 ½ cups Arborio rice
~2 ea beefsteak tomatoes, grated
~½ cup dry white wine
~1 Tbsp. unsalted butter
~2 Tbsp. grated Parmesan plus more for serving
~6-8 roasted cherry tomatoes
~Kosher salt and freshly ground black pepper
~Baby basil, as needed

  • Bring 6 cups of vegetable stock (or water) to a boil in a medium saucepan. Once at a boil, remove from the heat and keep warm.
  • In a large pot, heat 2 Tbsp olive oil and add onions. Saute 3-5 minutes, until translucent.
  • Add rice and toast. Add ½ the grated tomato and reduce liquid, 3-5 minutes.
  • Add the white wine and reduce until there’s only about 2 tablespoons in the pan.
  • In small batches, add the stock and let the rice soak in while stirring occasionally.
  • Finish the risotto with the other half of the grated tomato, butter, parmesan and roasted grape tomatoes.
  • Season with salt and black pepper and finish with basil and olive oil.
