Union Woodshop's WoodShop Pizza
Makes 2 - 12” Pies

Ingredients for the pizza dough:
15 oz Farina Flour
.30 oz Kosher Salt
.10 oz Yeast
1 cup plus 2 tbl Cold Water

Method:

Stir together flour, salt, and yeast
Add water and mix on low speed for 1 minute
Switch and mix on medium speed for 5 to 7 minutes, the dough should be smooth, stick to the bottom of the bowl but not the sides
Transfer the dough to the counter and portion into 12 oz. balls
Place onto a tray, oil lightly and wrap with plastic.
Place the dough in the refrigerator overnight, or set out to proof and use once it has risen.

Ingredients for the pizza:
4 oz Smoked Pulled Pork, Chopped
4
4 ozSmoked Beef Brisket, Diced
4 oz Smoked Chicken, Diced
6 fl oz Memphis Style BBQ sauce
2 oz Mozzarella, Shredded
2 oz White Muenster, Shredded
1.5 oz Pecorino Romano, Shredded
3 oz Red Onion, Diced

Method:

Preheat your oven to 425° f.  With a pizza stone or a metal baking sheet in the center of the oven.
Flour a cutting board and stretch out your dough until it is about 12” in diameter. 
Spread the desired amount of sauce on the pizza, usually around 3 floz and top lightly with cheese so that you can still see some of the sauce through the cheese.
Top with Pulled Pork, Brisket, Chicken and red onions as desired, any smoked meat BBQ items will also be a great substitute.
Slide the pizza quickly from the cutting board onto your baking pan. It helps jiggle the board quickly while holding it at an angle.
Bake until crust is golden brown and cheese and toppings are melted together nicely.
