2 pounds 80/20 Ground Brisket - separated into 4-8oz patties

1 cup Pimiento Cheese ( see below for recipe)

4 slices green tomatoes dredged in flour, buttermilk then flour and fried until crisp


sliced Tomatoes


sliced red onions

4 fresh baked buns of your choice

4 oz duck fat

pimiento cheese mix

1 cup shredded white cheddar

1 cup shredded provolone

1/2 cup mayo

1/2 cup minced roasted red peppers ( jarred is fine)


In a large cast iron skillet at med high heat add duck fat to pan.

Season patties liberally with salt and fresh cracked black pepper, add to skillet.

When juices start to rise to top (4-5 minutes), flip the burger patty and cook 2-3 minutes more ( MED).

As soon as you flip burger, add 2 oz pimiento cheese mix and let melt on top.

Remove patties from pan and add buns to toast. remove and dress bun with lettuce, tomatoes, onions, and pickles

Add burger patty, fried green tomato, and top bun. use wooden skewer to hold in place if needed.
