Mediterranean Omelet

Ingredients

1 tablespoon olive oil (use butter as alternate)

1/2 cup quartered grape tomatoes

1 tablespoon sliced scallions (chives are a good option)

Pinch of dried oregano

3 tablespoons crumbled feta cheese

1 tablespoon slivered black olives

3 large eggs

1/8 teaspoon coarse salt


Instructions

1. Start heating a 10" non-stick pan to ~ 200F. Pour olive oil into the pan.

2. Beat the large well using a blender (1-2 min on medium speed)

3. Sautee scallions until soft

4. Pour liquefied eggs into pan

5. Add oregano, tomatoes, and black olives

6. Vigorously stir eggs using a fork minimizing the size of the curls and avoiding browning of eggs.

7. Flatten stirred eggs before eggs solidify

8. Spread feta along a diameter

9. Fold across the diameter using spatula or fork.

Serve hot with toast or pancakes.


Optional: American Style

1. Start heating a 10" non-stick pan to ~ 200F . Pour olive oil into the pan.

2. Hand beat the large well using a fork

3. Sautee scallions until soft

4. Pour liquefied eggs into pan

5. Add oregano, tomatoes, and black olives

6. Slowly stir eggs using fork allowing large curls

7. Allow eggs to solidify and turn omelet on the other side. Cook for 30 seconds

8. Spread feta along a diameter

9. Fold across the diameter using spatula or fork.

Serve hot with toast or pancakes.
