National Aquarium in Baltimore's tasty way to control invasive fish

Their work includes anything from rescuing stranded dolphins to restoring watersheds.

For more than thirty years, staff from the National Aquarium in Baltimore has been helping marine life from the Chesapeake to Costa Rica.

A project called ‘Eat 'em to Beat 'em’ lets you play a part in controlling an invasive fish in the area!

Recipe for Pan Seared Lionfish in a Coconut Curry Sauce

12 ounces Lionfish fillet (can substitute grouper or catfish fillets)
1 tsp Allspice
1 tsp Jamaican Fish Spice
1 tsp Garlic (finely chopped)
1 stalk Scallion (chopped)
1 small Onion (chopped)
1 ounce Yellow Sweet Pepper for garnish
3 tsp Jamaican Yellow Curry
2 cups Coconut Milk
Scotch Bonnet Pepper (optional)
1 spig Thyme
¼ Cup Olive Oil
Salt and pepper to taste

Method:
1. Season fish filet with half of allspice, fish spice salt & pepper, drizzle with 3 tsp. of olive oil, toss and set to marinate for 10 minutes.
2. Put frying pan on high flame add small amount of oil enough to sear fish, add fish to hot pan away from you. Sear each side for two minutes, put on a hot plate and set aside.
3. Add the rest of olive oil to the pan, add in the curry powder, stir until dissolved into oil.
4. Add chopped onion, scallion, garlic scotch bonnet pepper, sauté for two minutes.
5. Stir in the coconut milk, add the rest of allspice, add salt & pepper to taste, add in the sweet pepper and thyme reduce until sauce thicken enough to coat spoon.
6. Serve with fish.
