Bavarian Inn's ponzu fish marinade

(myFOXDetroit.com) - Executive Chef Phil Fahrenbruch from the Bavarian Inn Restaurant in Frankenmuth shares a recipe for Ponzu fish marinade and discusses the new Michigan on Main Bar & Grill.

Ponzu Fish Marinade

Ingredients:


2 Cups water
5 Tbs. crystallized lemon (could replace this with 10 Tbs. lemon juice)
1 1/3 Cups soy sauce
½ Cup mirin, can be found at most Asian specialty stores
½ Cup brown sugar, packed
2 tsp. crushed red peppers
2 Tbs. toasted sesame seed oil
1 Tbs. garlic, chopped
1 Cup eel sauce, can be found at most Asian specialty stores or could substitute with oyster sauce

Method:

Combine ingredients together and mix well. Place the fish into the marinade and refrigerate for 12 to 24 hours. Remove the fish from the marinade and sear over medium heat in sesame seed oil or bake on a lightly oiled sheet tray in a 350 degree oven until fish is cooked through.
