Slow Simmered Red Sauce

4 28 ounce can crushed tomatoes

3 14 ounce can diced tomatoes

1 5 ounce can tomato paste

2 medium onions chopped

8 cloves garlic pressed

1 cup fresh basil cut in a chiffonade or 2 tablespoons dried

3/4 teaspoon crushed red pepper flakes

1 ½ teaspoon dried oregano

3 tablespoons olive oil

1 cup red wine

Heat olive oil over medium heat in a large soup pot. Add onions and cook for 3-4 minutes, add garlic and cook another 2 minutes. Add all other ingredients and cook until sauce is bubbling, reduce heat and simmer slowly for 4-6 hours, stirring occasionally.

Tip: Freeze extra sauce in containers and use as needed instead of buying bottled sauce.

 

Spicy Arrabiata with Sausage and Penne Pasta

3 cups slow simmered red sauce or bottled variety

1 pound Kielbasa sausage cut into 1 ½ inch pieces

3 tablespoons olive oil

2 cloves garlic pressed

1/2 teaspoon red pepper flakes

1 pound penne pasta

¼ cup Parmesan cheese

Salt to taste

Cook pasta in salted water until al dente. Drain pasta and return to pot, add remaining ingredients reserving Parmesan and cook for 3-5 minutes until heated and sauce is thickening. Serve with a generous sprinkle of Parmesan cheese.

 

Chicken Mimosa

2 ½ cups slow simmered red sauce or bottled variety

2 boneless, skinless chicken breasts

1 tablespoon olive oil

½ cup chicken stock or white wine

2/3 cup heavy cream or fat free half and half

1 tablespoon butter

1/3 cup sliced pepperoncini's

1 package frozen artichokes chopped

½ teaspoon red pepper flakes

¼ cup parmesan cheese

Salt and pepper.

1 pound spaghetti

Place chicken breast in a zip lock bag and pound with a rolling pin to tenderize and cut into 1 inch strips. Heat olive oil in large chefs' pan over medium high heat. Salt and pepper chicken and add to pan. Brown chicken 3 minutes on each side. Start pasta cooking in salted boiling water. Deglaze pan with chicken stock or white wine. Add artichokes, pepperoncini's, red pepper flakes and sauce to pan and simmer for about 8 minutes. Add heavy cream and parmesan cheese to the sauce, stir to combine. Add butter to sauce. Add pasta to sauce, toss to coat and serve.
