Kale/Spinach Salad with Mustard Vinaigrette

Kale/Spinach Salad with Mustard Vinaigrette

Mustard Vinaigrette
½ cup champagne vinegar
1/3 cup red wine vinegar
¼ cup olive oil
1 T fresh lemon juice
1 clove of garlic, passed through a garlic press
1 T plus 1 tsp. whole grain Dijon mustard
3 T Agave nectar
½ tsp. Kosher salt
¼ tsp. fresh ground pepper

Assemble all dressing ingredients in a jar and shake vigorously to mix.

Salad Ingredients

2 cups kale, stems removed and chopped
2 cups of baby spinach
½ of an avocado, chopped
¼ cup of purple onion, sliced
½ cup grape tomatoes, halved
¼ manchego cheese, shaved
¼ cup of sliced almonds
½ cup of blueberries

Assemble all salad ingredients in a mixing bowl and toss with the desired amount of vinaigrette.  Feel free to adjust any salad ingredients to your taste or add any of your favorite toppings.
