Sautéed Garlic Red Pepper Chicken with Medley of Steamed Vegetables

Rinse and cut chicken into strips.

Prepare sauté pan with extra virgin olive oil.

Mix crushed red pepper and 3 minced garlic cloves or wild garlic mix (from Oil & Vinegar in Allen, TX) on chicken.

Add to hot pan on medium heat.

Cook for 3 minutes on each side or until done in the middle.

Steam cauliflower, carrots, squash, broccoli until tender (about 4 min).

 

Lime Mustard Chicken with Steamed Asparagus with fresh Parmesan

Rinse and cut chicken into strips.

Prepare sauté pan with extra virgin olive oil.

Cover chicken with Dijon, honey or (mustard sea asparagus from Oil & Vinegar in Allen, TX).

Cook approximately 3-4 min on each side until done.

Zest fresh lime on top.

Rinse and trim ends of asparagus.

Steam until tender (about 7 min).

Drizzle olive oil on top of asparagus and top with freshly grated parmesan cheese.

 

Lemon Chicken with Brussels Sprouts

Rinse and cut chicken into strips.

Prepare sauté pan with extra virgin olive oil.

Squeeze fresh lemon and zest on top of each side of chicken and sauté 3-4 minutes on each side until done.

Steam Brussels sprouts until tender.

Prepare sauté pan with olive oil.

When hot, add Brussels sprouts and toss while adding fresh lemon.

Cook until brown.

Place chicken on top of bed of fresh spinach.
