Holly Live: Rebuilding the oyster industry

It has been almost three years since the Deepwater Horizon oil spill left the Gulf Coast in a state of disaster.  Since then, fishermen and members of Congress have joined forces to work on rebuilding the gulf's ecosystem-- along with the region's oyster industry.  Our Holly Morris checked in on the progress that's being made.

Charbroiled Oysters

24 each oysters, large

Butter Mixture

2 quarts Whirl or butter substitute
.25 cup Parmesan cheese, grated
.25 cup Romano cheese, grated
1 tablespoon Garlic, minced
2 teaspoons Garlic, granulated
1 teaspoon White pepper

Cheese Mixture
1 pound Parmesan cheese, grated
1 pound Romano cheese, grated

Combine all of the ingredients from the butter mixture together in a mixing bowl and reserve. Do the same with the ingredients from the cheese mixture in a separate bowl. Preheat oven to 400 degrees. Shuck the oysters and disconnect them from the shell. Place the raw shucked oysters on a sizzle plate or a baking sheet with a raised edge. Whisk the butter mix and scoop 1.5 oz of it on top of each oyster, then cover each oyster with the grated cheese mix.

Bake for 5-8 minutes, or until you can just start to see the cheese browning. Remove the oysters from the oven. Set the oven to broil and place the oysters under the boiler until they darken in color to a golden brown. Be careful to keep an eye on them because they will burn fast.  Remove and enjoy.
