Chocolate French Toast

Ingredients


FOR THE COCOA GRANOLA

½ cup oatmeal

½ cup bran flakes

½ cup granola

¼ cup coconut

2 tablespoons almonds, sliced

2 tablespoons pecan pieces, chopped

1 tablespoon brown sugar

1 tablespoon butter

¾ teaspoon vanilla extract

3 tablespoons honey

2 tablespoons cocoa powder


FOR THE DRIED CHERRY MAPLE SYRUP

1 ½ cups maple syrup

1 cup dried cherries


FOR THE FRENCH TOAST

16 slices chocolate bread, cut 1/2 inch thick

2 each whole eggs

1 cup milk

2 tablespoons sugar

1 teaspoon cinnamon

½ teaspoon nutmeg

2 cups cocoa granola, from above

 

Method


FOR THE COCOA GRANOLA

1. Combine all ingredients (except the cocoa powder) in a roasting pan and set oven at 275℉. (VERY IMPORTANT).

2. Toast ingredients stirring every 10 minutes and rotating pan.

3. Repeat for 2 hours or until granola is golden brown. Remove from oven.

4. After granola has started to cool, dust with cocoa powder and continue to cool.


FOR THE MAPLE-DRIED CHERRY SYRUP:

1. In a small sauce pot add maple syrup and dried cherries together.

2. Heat on low heat until cherries start to soften.

3. Serve warm.


FOR THE FRENCH TOAST:

1. In a mixing bowl, whisk eggs, milk, sugar, cinnamon and nutmeg together until smooth.

2. Dip each piece of chocolate bread into the batter until coated.

3. Spread cocoa granola on a cookie sheet. Dip each piece of batter dipped bread into the granola. Crusting each side of the bread.

4. In a cast iron skillet or on a griddle, melt whole butter and griddle each piece of French toast until golden brown on each side.

5. Remove from pan or griddle. Cut in half and serve with dried cherry syrup.

 

Notes

Serve with your choice of whipped butter, whipped cream or vanilla ice cream. A sprinkle of powdered sugar and cocoa is nice as well.
