2-Unique Red Hot Shrimp Shooters 

28oz  spicy tomato juice
8oz   good quality vodka
1 tsp horseradish
2 tsp Worcestershire
¼ tsp fresh ground black pepper
3 Tbs Celtic sea salt
½ tsp Tabasco Sauce
½ tsp celery salt
18 pc. 21/25 shrimp cocktail, cooked tail on
1 lime quartered
¼ cup sea or kosher salt   

1   In a pitcher whisk together first eight ingredients.
2   Rub the rims of 18 shot glasses with the lime wedges, dip rims into kosher salt.
3   Pour bloody Mary mix into each shot glass and garnish with 1 shrimp.

Sizzling Chorizo Stuffed Dates
18 pieces Medjool Dates
1 lb chorizo sausage
18 strips of bacon
2 cups of tomato juice
½ chipotle pepper
(You will find chipotles packaged in a small cans in ethnic department of most grocery stores or Hispanic market.)
Place two cups of tomato juice & chipotle pepper in small heavy bottom pot and reduce to approximately 75%
Cut ¾ into the side of date lengthwise, hinge open and remove pit.
Stuff dates with a heaping tablespoon of rendered cooked chorizo and close
Lay bacon flat on sheet tray and par bake for 5 minutes, let bacon cool for a few minutes and then wrap bacon strip around chorizo stuffed date overlapping a bit and trim away extra.  Place bacon wrapped date overlapping bacon side on sheet tray.    
Brush dates generously with spicy tomato glaze and bake at 350 for 12-15 minutes until bacon is crispy.  If you have extra glaze brush tops of dates again half way through cooking time.
TLA Goat Cheese Grill Cheese with Pesto
Cut two hearts out of sourdough bread (2 inch heart shaped cookie cutter will do the trick, or cut free hand)
Brush both side with a smidge of olive oil and bake in the oven for 2-3 minutes until  lightly toasted
1 tablespoon cream cheese
2 tablespoon goat cheese
1 tablespoon diced sun dried tomatoes (reconstituted or the kind packed in oil) 
Mixed chopped tomatoes and cheese, season with salt & pepper, spread on heart shaped croutons and broil in oven for 30-60 seconds just before service to brown a smidge
Herb Dijon Lamb Chops

6 Free range lamb chops
2 Tb Dijon Mustard
3 Tb virgin olive oil
2-3 garlic cloves chopped
The juice of ½ lemon
1 tsp grated lemon zest
2 TB. olive oil
The night before or morning of combine all ingredients and rub lamb chops
Heat  heavy bottom sauté pan with olive oil and sear lamb chopped on both side, about 2 minutes.  This should produce a medium rare lamb chop, cook longer or shorter per your doneness preference.  Consider searing lamb earlier in the day and then just a quick pop in the oven to reheat, lamb chops will be great hot or room temp
