How to make baked potato soup

There is nothing more comforting than a steaming bowl of homemade soup on a cold winter's day. Get this recipe from the Soup Lady® and Lori Maceri of Maceri's Soup & Scoop in Utica.

Ingredients:
4oz. Vegetable Oil
1/2lb. Butter
2 med onions finely diced
3c Flour
1 Gal Chicken Stock
1 Gal Whole Milk
1 Pt. Heavy Cream
7lb Potatoes diced
2lb Shredded Cheese (American or Cheddar)
1lb Bacon Cooked and Chopped
A handful of Fresh Chives chopped
Salt & White Pepper to taste

Method:
Boil Potatoes until tender. Do not over cook. Set aside.

Sweat the onions in butter and extra virgin olive oil until almost tender, approximately 3-4 minutes. Be careful not to brown. Add flour to make a roux. Cook very low for 1-2min.

Add the chicken stock and mix well. Add the milk, salt, and white pepper, and mix. Slowly heat till thickened. Watch the pot, as it will scorch. Add the cheese, bacon, and chives, and continue to cook on low heat for about 10-15 min.

Add cooked potatoes and cream and heat to temperature.

You may top with additional bacon, cheese, chives, and sour cream to serve if desired.
