SICILIAN STUFFING (Bread Pudding)
1 pint water
1 pint medium cous cous
¼ cup butter
Zest of 2 lemons
1 cup golden raisins
1 cup dried figs (diced)
7 oz semolina bread (no crust/ diced)
3 medium white onions (small diced)
½ cup EVOO
1 cup white wine
1 ½ heavy cream
1 cup milk
1 cup pecorino
1 cup honey
3 whole eggs
¼ cup salt
Bring water and butter to a boil and season. Combine couscous, raisins, lemon zest, figs together in a flat dish. Pour boiling water over couscous and cover with plastic wrap and allow sitting for 5 minutes. With a fork, gently fluff couscous until it completely mixed. In a sauté pan sweat onions until slightly translucent and add white wine. Continue to cook until white is completely evaporated and then remove from heat. Combine remaining ingredients with couscous mix and onions in a separate bowl. Mix until fully incorporated then bake in an oven safe pan at 350 degrees covered for an hour. Uncover and continue baking for an additional hour.
