  • 1/2 -1 can Low Sodium Cream of Mushroom Soup
  • 1/2 cup Frozen Organic Peas
  • 1/2 cup Shredded Cheddar Cheese
  • 1/2 cup Chopped Celery
  • 1/2 cup Chopped Onion
  • 1/2 cup Chopped Carrot
  • 1-2 Chopped and Seeded Jalapeños
  • 3 Cloves of Minced Garlic
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Black Pepper
  • Pinch Sea Salt

Directions

  1. Preheat oven to 325 degrees
  2. Pull all the turkey off the bone and remove skin. Chop turkey.
  3. In a large mixing bowl, combine turkey and remaining ingredients. Press in to the piecrust. Bake for 20-30 minutes.
  4. Top with some shredded cheddar cheese, crispy onions or crumbled potato chips

Sweet and Spicy Butternut Squash

Serves 1-2

Ingredients

  • 1 Butternut Squash
  • Earth Balance or Butter, for brushing
  • Olive Oil
  • 1 pinch Sea Salt
  • 1 pinch Cayenne Pepper
  • 1 pinch Nutmeg
  • 1 pinch Brown Sugar
  • Few Dollops Goat Cheese
  • 1 tablespoon Half-and-Half

Instructions

Preheat the oven to 375 degrees

Bring your biggest pot of water to a boil Cook butternut squash in hot water for 4-5 minutes (this softens the squash and makes it easier to peel) Peel the squash and cut it in half lengthwise Scoop the seeds out with a spoon

Cut the squash into wedges, like you would cantaloupe Lay the wedges across a baking sheet covered in aluminum foil

Cut the squash into small cubes

Scatter them across a baking sheet covered in aluminum foil

Brush Earth Balance or butter across the squash (I like to drizzle a thin layer of olive oil across it too) Sprinkle with salt, cayenne and nutmeg Bake the squash for 30-40 minutes, checking occasionally Cook longer for the mashed version (you want the cubes to fall apart with very little effort from your fork)

For sliced version, arrange squash on a serving plate and sprinkle with brown sugar

Dijon Brussels Sprouts

Serves 2

Ingredients:

  • 20 halves Brussels Sprouts
  • 2 tablespoons Olive Oil
  • Sea Salt
  • 2 tablespoons Dijon Mustard

Directions

Preheat the oven to 350 degrees

Toss Brussels Sprouts with olive oil

Arrange on baking sheet with centers facing up Sprinkle with sea salt Bake for 30 minutes or until desired tenderness (I like mine a bit charred) Remove from heat and toss sprouts in Dijon mustard Serve
