One of our top local chefs returns to the national spotlight for another round of a popular cooking competition        

FOX 5’s Holly Morris joined Jeff Eng, Executive Chef at Tower Oaks Lodge in Rockville for more on his appearance on Chopped!

KIMCHEE
Kimchee Fries
kalbi, cilantro-onion relish and chili aioli

kalbi:
1#              thinly sliced boneless beef short rib
½ c             soy sauce
½ c             rice syrup
2 T             sesame oil
2 T             mirin
2 T             grated ginger
1 ea                       onion
3 cloves     garlic
½ ea                      Asian pear
2 T             toasted sesame seeds
1 T             black pepper
cilantro-onion relish:
diced white onion
chopped cilantro
chopped scallions
lime juice
salt & pepper
chili aioli:
1 ea                       egg yolk
1 clove       garlic
1 T             gochujang sauce
1 t              lime juice
½ t             Dijon mustard
1 c             olive oil

 

KIMCHEE
Kimchee Fried Rice
chili bean sprouts, garlicky spinach, sesame carrots, nori, tempura chanterelle mushrooms,
 sunny side up duck egg and gochujang

kimchee rice base:
1 c                   cooked rice
½ t                  sesame oil
1 T                  canola oil
½ c                  napa cabbage kimchee
chili bean sprouts:
½ c                  bean sprouts
¼ t                  toasted sesame seeds
¼ t                  sesame oil
pinch                              Korean chili powder
to taste                         salt & pepper
garlicky spinach:
2 c                   spinach
1 clove                           chopped garlic
splash                            white vinegar
to taste                         salt & pepper
sesame carrots:
½ c                  julienned carrots
¼ t                  sesame oil
to taste                         salt & pepper
tempura chanterelles:
¼ c                  chanterelle mushrooms
½ c                  cake flour
1 T                  corn starch
½ t                  salt
1-1 ½  c                          cold water

 

BACON
Local Apple & Bacon Lattice Tart
Crowley Colby and apple cider reduction

pie dough
apples
butter
brown sugar
cinnamon
bacon lattice
Cheddar cheese
apple cider reduced to syrup


Instructions:

Kimchee fries
Marinade beef overnight
Grill
Chop
Fry fries
Mix onion relish

Aioli:
Add everything but olive oil in blender to mayonnaise consistency Drizzle olive oil

Kimchee fried rice
Rice sauté cold rice in canola and sesame oil Add kimchee until rice is hot and bottom is crispy Top with spinach sautéed in garlic Bean sprouts sautéed w Korean chili powder Carrots sautéed in sesame oil Sunny side up duck egg Batter and fry chanterelles

Bacon apple tart
Lined baked tart shell
Sprinkle with cheddar cheese
Too with sliced apples
Cinnamon, brown sugar, butter and bacon More cheese Bake 350 for 15 min
