Hawaiian Inspired Burgers

Pono burger is a new restaurant in Santa Monica and all their food is organic and fresh from the farmer's market. Chef Makani is from Hawaii and is here to show us her new toppings for your burgers. Today, she is showcasing how to make a sauce made from figs-there's a lot more to Hawaiian cuisine than pineapples, and here's the recipe:

Chef Makani's Fig Jam

1lb. dried Black Mission figs, diced

1 cup port wine

1 cup of beef stock

1/2 cup of onion, chopped

1 tbsp. olive oil

1 tsp. fresh rosemary

Sauté the onions in olive oil until translucent. Add the figs, wine and beef stock and rosemary and cook the figs until they are soft and have a sticky consistency. 

Chef Makani says this jam is amazing on burgers or toasted brioche. She says her recipes are inspired from a Hawaiian philosophy, which emphasizes balance.

You can taste that balance in this recipe. Normally, rosemary is a very strong flavor, but there's very little here. It acts more of a way to highlight the figs-which are really the stars of this jam.

She combines that philosophy with local, organic ingredients and serves whatever is fresh and in season.
