Southern Nosh's fried green tomatoes

No one does fried green tomatoes quite like Southern Nosh Vegetarian Soul Café. The soy milk and yellow cornmeal crust sets this recipe apart from others.

3 firm medium-size green tomatoes
2 cups yellow cornmeal
2 cups soy milk
1 teaspoon sea salt
¼ teaspoon roasted garlic pepper (to taste)
¼ teaspoon black pepper
1-1/2 cup corn oil
Finish with sea salt to taste

1. Cut tomatoes into 1/3 inch slices.
2. Combine cornmeal, sea salt, garlic pepper and black pepper in a shallow bowl or pan.
3. Dip tomato slices in soy milk and dredge in cornmeal mixture.
4. Pour oil to a depth of ¼ to ½ inch in a large cast iron skillet: heat to 375°.  Drop tomatoes, in batches, into hot oil, and cook 2 minutes on each side or until golden.  Drain on paper towels or a rack.  Sprinkle hot tomatoes with sea salt to taste.
