Rodin Winter Ratatouille

2 Cups Butternut squash -peeled, medium diced 
1 Red onion- medium diced
4 cloves garlic- minced
1 Cup parsnips- peeled and medium diced
1 Fennel Bulb- sliced thin
1 Sweet potato-peeled, medium diced
1 Red Bell Pepper- medium diced
5 sprigs Thyme
2 Tbs Brown Sugar
1/4 cup Blended Oil
Salt and Pepper
1 1/2 cup French Feta


Preheat oven to 400 degrees. Combine all vegetables, brown sugar, thyme, salt and pepper in large bowl and mix to cover all. Place on sheet pan with parchment in one single layer and bake for 30-40 minutes or until vegetables are golden brown.


Remove from oven and top with cheese while hot. Transfer to serving platter and enjoy!


Serves 4-6.
