Celebrating Belgian Restaurant Week, waffle recipe from Brasserie Beck

Monday marked the beginning of Belgian Restaurant Week here in the District and to celebrate Paul Stearman, chef de cuisine at Marcel's gave us a lesson in Belgian cooking.

Stearman whipped us up the Nation's signature treat, waffles! This is the exact recipe that will be served at Brasserie Beck throughout the week. Below is the complete recipe so you can celebrate Belgian Restaurant Week in your own kitchen.

Sweet Corn and Blueberry Belgian Waffle with Whipped Cream

Chef Paul Stearman, Robert Wiedmaier Restaurant Group

Sweet Corn Waffle Batter

Yield: 10 servings


3 cups                    Waffle flour [Carbon Golden Waffle Mix is suggested]

1 cup                      Cornmeal

6 each                    Eggs

2 sticks                  Butter, melted

3 cups                    Milk

1 cup                      Buttermilk

1 tablespoon            Vanilla extract

.25 cup                   Honey

.5 teaspoon             Ground cinnamon


Place all ingredients in a mixing bowl and whisk until all ingredients are incorporated evenly. Ladle into prepared Waffle iron and cook until golden brown. Serve warm. 

Blueberry Compote

Yield: 10 servings


2 pint                    Blueberries

.5 cup                   Sugar

1 each                  Lemon zest

6 each                  Mint leaves

.5 cup                   Water

.5 each                 Vanilla bean, scrapped 


Combine 1 pint of the blueberries along with the remaining ingredients (sugar, lemon zest, mint leaves, water and vanilla) in a heavy, small saucepan. Simmer over medium heat until the berries burst, stirring often, roughly 8-10 minutes. Remove the vanilla pod and blend the mixture. Gently mix in the reserved 1 pint of fresh blueberries. Serve warm.

Whipped Cream


1 cup                     Heavy cream

1 teaspoon             Vanilla extract

1 tablespoon           Sugar 


In a large bowl, whip cream until stiff peaks have just formed. Beat  in vanilla and sugar until peaks form. Reserve in refrigerator until ready to serve. 


Plate waffle, top with whipped cream (as desired) and Blueberry Compote on the side or as a topping.

Serve and enjoy!
