Ketoprak (Batavian Noodle Salad with peanut dressing)
Cooking/Prepping time: 15 minutes - Makes 10 servings.
1 package Rice noodle
1/2 lb. Fresh mung bean sprouts
1 package Fried tofu, cut into bite size
Prawn crackers and Sweet soy sauce for garnish
Peanut sauce :
20 tbsp ground roasted peanut
5 Birds eye chillies (or less if mild version is preferred)
10 cloves garlic (1 garlic per serving)
Sea salt, to taste
1/4 to 1/2 c. Boiling water (enough to make the consistency a thick liquid)
Fresh key lime juice and lime zest
Soak rice noodles with boiled water for 15 minutes. Ground all peanut ingredients and add boiling water to the consistency. Place rice noodles, fried tofu, and blanched sprout then pour the peanut sauce, garnish with sweet soy sauce and prawns crackers.
