Dago Joe's one pan garbage can vegetarian lasagne

Total prep/cook time - 15 minutes. Use any variety of pasta, veggies and cheeses to suit

Cookware:
3 quart sauce pan and lid
Several mixing bowls
Cutting board and knife
1/2 teaspoon and 1/2 cup measurers
Stirring spoon

Ingredients:
8 oz uncooked pasta (we use campanelle, use what you like or have lying around)
1 3/4 cups water

1 tsp minced garlic
1/2 tsp black pepper

Veggies (3 3/4 cups total):
1/2 cup chopped broccoli
1/2 cup chopped asparagus
3/4 cup chopped red pepper
1/2 cup shredded carrots
1/2 cup chopped zucchini
1/2 cup chopped yellow squash
1/2 cup peas

3/4 jar Dago Joe's Racy Olive sauce (you can always add more if you're feeling' saucy)

Cheese blend (1 3/4 cups total):
1/4 cup shredded mozzarella
1/4 cup shredded provolone
1/2 cup shredded pecorino romano
1/2 cup ricotta
1/4 cup gorgonzola (large crumbles)

Fresh basil

Optional - ground beef or sausage

Directions:
Add pasta and water to pan, place lid and bring to boil. (Use lid throughout cooking process. Stir once or twice during cooking to prevent sticking.) Turn temperature down to low boil. Do not let boil over.
After 6 minutes stir in garlic and pepper, then add broccoli, asparagus, red pepper and carrots. Turn heat back up to boil and steam vegetables, keeping lid on as much as possible. After 2 minutes (8 minutes total) add remaining vegetables and cook about 3 more minutes (11 minutes total or until desired pasta/veggie doneness), maintaining heat at low boil.
Add 3/4 jar Dago Joe's pasta sauce. Stir in and heat about a minute (12 to 13 minutes total).
Remove from heat and GENTLY fold in the 1 3/4 cup cheese mixture. Do NOT over-mix cheese into. Top with fresh basil. Chow down.

Meat Option: Cook ground beef or sausage in pan prior to adding water and pasta.
Fat-free Option: Use Dago Joe's Lush sauce and fat free (yuck) cheeses.
Bake Option: Place in 8x8 baking dish after mixing in cheese. Top with Pecorino Romano cheese. Bake at 375 degrees for 5-10 minutes.
