Meatless Monday: Detroit Vegan Soul's coconut kale

Serves 4

1 tbsp oil
2 carrots, chopped
1/4 cup onions
2 cloves of garlic
1 bunch of kale
1/3 cup coconut milk
1 tsp onion powder
1 tsp sea salt
pinch of red pepper flakes

1. Wash and remove stems from kale.
2. Chop or tear kale into pieces.
3. Mince garlic cloves
4. Heat skillet over medium to high heat.
5. Add 1 tbsp oil, onion, garlic, and carrot. Saute' 2 to 4 minutes.
6. Add spices and saute' 1 minute and add kale.
7. Simmer on medium to low heat for 10-15 minutes and serve.
