Fish & Chips - Legal Sea Foods recipe

Fish & Chips - Legal Sea Foods

Ingredients:
8oz cod pieces
3oz Fried fish coating (below)
2oz buttermilk
canola oil for frying
lemon wedge
French fries
cole slaw
tartar sauce

Preparation Method:
1. Place fish in a bowl, add buttermilk and coat fish completely.
2. Drain fish and drop into fried fish coating. Coat fish by rolling and gently dusting with fried fish coating.
3. Pour canola oil about ¼ inch up the sides of a heavy skillet and heat to 365 degrees.
4. Gently add the fish to the hot oil a few pieces at a time. Fry until crispy, about 3-5 minutes.
5. Remove fish and drain on paper towels.
6. Serve with French fries, cole slaw, tartar sauce and lemon wedge.

Fried Fish Coating

Ingredients:
1C white cornmeal
1C unbleached all-purpose flour
½ t dry mustard
½ t sea salt

Preparation Method:
1. Add all ingredients to a blender. Blend at medium speed until combined, 20-30 seconds.
