Bad Brad's BBQ Superbowl ideas

2 # Brisket ( Fatty part of the brisket called point)

4 slices of Bacon

BBQ Seasoning to taste

Method

Using Bad Brads Smoked Brisket. Remove the fatty end of the brisket and resmoke until the temperature reaches 215 degrees. Once that meat is very tender remove from smoker and let cool in the refrigerator. Once cool, cut brisket into long strips. Wrap bacon around the end these strips, making sure that the whole piece of brisket is wrapped with bacon. Season with your favorite spice rub and smoke or cook in the oven at 300 degrees or until the bacon is golden brown. Cut into bite size pieces and eat as is or with your favorite BBQ Sauce.

Bad Brads BBQ Mac and Cheese

Serves 4

1# Macaroni

Cheese Sauce

1# Aged White Cheddar Cheese Grated

3 oz Parmesan Grated

4 oz. Cornstarch

1 oz. Fresh Thyme, picked of twigs and finely chopped

Salt to taste

Black Pepper to taste

Bread Crumb Crust

2 C. Japanese Bread Crumbs

1 T. Garlic Minced

1 T. Fresh Thyme, picked of twigs and finely chopped

2 oz. Canola Oil

1 t. Salt

1 t. Pepper

Blended Cheeses

2 oz. Aged White Vermont Cheddar Cheese Grated

2 oz. Yellow Cheddar Cheese Grated

1 oz. Asiago Cheese Grated

Directions

Heat a large pot of water to a boil. Add Salt to flavor the water. Add your pasta and cook by following the manufacturer's directions. Drain pasta. In a large pot add your milk and simmer. Take your cornstarch and put into a bowl and take just a little bit of water and whisk together until it becomes smooth. Add this to your milk and simmer and it will slightly thicken. Now start whisking in your cheese to the thickened milk. Once all cheese has been added, add your salt, pepper and thyme to taste and set aside.

In a mixing bowl add the bread crumbs, garlic, thyme and your seasonings. Mix well and place on a baking sheet in a thin, even layer and bake off until golden brown, at 300 degrees for approximately 15 minutes. Set aside. In a large pot add all of your pasta and mix in your sauce so that it doesn't look dry and to the point where it does not look soupy. Get this hot. Once hot, add your two types of cheddar and asiago to the pasta mixture and this will give the stringy consistency your looking for. Now you can place into a ceramic dish. Sprinkle more of your cheese on top bake at 400 and cook until the top cheese is melted. Now add your bread crumbs and bake until the crumbs are golden brown.
