Maceri's Chicken Dumpling Soup

(WJBK) -- There is nothing more comforting than a steaming bowl of homemade soup on a cold winter's day. Happy Cooking from Maceri's Soup & Scoop®, Pitas & Subs Shelby Township.

4oz. Vegetable Oil
2 med onions finely diced
Stalk of Celery diced
8 Carrots diced
6 Boneless Skinless Chicken Breast
3c. Flour
1 Gal Chicken Stock
1/2 Gal Whole Milk
1 Pt. Heavy Cream
3lb Homemade Dumplings
Salt & White Pepper to taste

Cook dumplings until tender. Do not over cook. Set aside.

Sweat the onions, celery, and carrots in oil until almost tender, approximately 3-4 minutes. Be careful not to brown. Add flour to make a roux. Cook very low for 1-2min.

Add the chicken stock and mix well. Add the milk, salt, and white pepper, and mix. Add chicken breast. Slowly heat till thickened. Watch the pot, as it will scorch. Add the cheese, bacon, and chives, and continue to cook on low heat for about 20-30 min.

Add cooked dumplings and heat to temperature.

Take off heat and add heavy cream.
