Soup recipes for Thanksgiving meal leftovers

The Thanksgiving meal is over, and you have plenty of leftovers. What do you do with them? Jennifer Levison, known as Souper Jenny, had a few recipes to turn those leftovers into something fantastic!

Recipes:

Sweet Potato Casserole Soup

2 tablespoons olive oil
1 large yellow onion, chopped
4 cups sweet potato casserole
1 quart low salt vegetable stock

Saute onion for 5 minutes. Add sweet potato and stock, bring to a boil then simmer 45 minutes.
Puree with hand blender.

Thanksgiving Leftovers Turkey Soup

1 turkey carcass
4 carrots, cleaned and chopped
4 ribs celery, chopped
1 sweet onion chopped
Leftover stuffing
Leftover cranberry sauce
Leftover turkey

Make stock first. Put carcass in stock pot with all veggies and cover with water. Bring to a boil and then low simmer for two hours, remove the heat and strain, saving all broth.

Put broth back into pot with more carrots, celery and onions. Bring to a boil and then simmer 30 minutes. Add turkey, stuffing and cranberry sauce.
