Hudson Valley Restaurant Week is well underway. Among the participating restaurants is Agriturismos in Pine Plains, New York.
Chef and owner Mark Strausman stepped into the Good Day Cafe on Friday and prepared eggs alla campagna.

Eggs Alla Campagna
8 farm eggs from happy hens
1 jar Agriturismo tomato sauce or any local brand
2 tbsp extra virgin olive oil
4 cloves garlic
1 tbsp mixed local herbs
1/4 stick butter
1/2 cup grated Arethusa dairy alpine cheese or other local cheeses
1/4 loaf peasant bread
For the garlic bread: Take two cloves of garlic and chop fine. In a small frying pan add the butter and garlic and sliced peasant and bake until bread is toasted and garlic is brown set aside for the dish.
In 12 inch skillet add the olive oil and heat with remaining cloves of garlic and let the garlic brown add the tomato sauce and let simmer for a minute. Add the chopped herbs. Crack all of the eggs into the tomato sauce and sprinkle in the grated cheese. Let simmer until eggs are cooked and place over the garlic bread and enjoy!
