ROYAL OAK, Mich. (WJBK) -- This time of year, family and friends are getting together for tailgating and parties before those weekend football games.

Perhaps you're wondering what to make for your next event.  Chef Kelli Lewton from 2 Unique Caterers and Event Planners in Royal Oak has some of ideas.

Chef Kelli's Stadium Steak Joes
Yield: 8-10 sandwiches

INGREDIENTS

• 2 # (around 4 cups) cooked steak, steak tips, top round style of beef of your choice ~diced medium
• 1 lb. raw chorizo
• 1 tablespoon raw chopped garlic 
• 3 tablespoons olive oil or fat of your choice  
• 1 Green Pepper
• 1 medium onion~ diced small
• 1/3 cup pickled Jalapeno peppers, diced 
• 1 cup of your favorite BBQ sauce
• ¾ cup ketchup 
• Sea salt and black pepper to taste
  

METHOD

1. In heavy bottom rondo style pan, heat olive and cook diced onion over medium heat for a minute or two, add garlic and continue to sauté for an addition minute
   
   
2. Add raw chorizo, cook down over medium heat until cooked through, and drain off extra fat.
   
   
3. Add green peppers, jalapenos, cooked beef, BBQ sauce and ketchup
   
   
4. Simmer all ingredients over medium to medium low heat for 20-30 minutes
   
   
5. Season
   
   
6. Serve on fun pretzel roll or rolls of your choice
   
   
7. Top with Onion Straw (optional)
   
   
8. Onion Straw = 1 onion sliced paper thin, tossed in seasoned flour, shake excess flour off fry in hot oil (30-45 seconds)

Bacon S'mores
Yield: 1 dozen

INGREDIENTS

• 24 Pieces graham crackers squares
• 12 slice apple-wood or cherry-wood smoked bacon, cooked in oven with a sprinkle of brown sugar and light brush of maple syrup and then sliced in half crosswise
• 12 large Square Toasted marshmallows 
• ¾ cup good quality chocolate (small pieces)
• 1/3 cup heavy cream; Heat cream, remove from heat and stir in chocalte to make  chocolate ganache  
  

METHOD

1. Place one hot, toasted marshmallow on each 1 graham cracker, top with chocolate Ganache and remaining graham cracker square to make a S'more sandwich
