Lola's Apple Spice Cupcakes (makes about 30) 1 cup Turbinado sugar 1 cup light brown sugar 2 sticks butter, softened 2 tsp vanilla 2 eggs 3 ½ cups all-purpose flour 2 tsp baking soda 4 tsp cinnamon 1 tsp nutmeg 1/2 tsp cloves 1 tsp ginger 1/2 tsp salt 2 cups applesauce *Beat together sugar and butter for 3 minutes til light and fluffy. * Add eggs and vanilla to mixer, beat 1 minute more. * sift together dry ingredient in a bowl, then add half to of the mixture to your sugar/butter and stir it in. * stir in all the applesauce *add the rest of the flour mixture and stir til it's all combined. * scrape down the bowl then stir it all one more time to make sure you don't have any lumps of butter or sugar *Scoop the batter into baking cups (using an ice cream scooper is helpful) in cupcake pans. They should be about 2/3 full. *Bake in oven preheated to 350 degrees for about 25 minutes until a tester comes out clean. *Let the cupcakes cool completely before frosting with cream cheese icing. Lola's Cream Cheese Frosting ½ lb cream cheese 1 ½ sticks butter, room temperature ½ tsp vanilla ¼ tsp almond extract 1 ¾ lbs powdered sugar *Beat all except powdered sugar in the bowl of a stand mixer until all lumps are gone. Slowly add powdered sugar, beating until smooth. * You can apply the Frosting with a pastry bag or with a knife or spatula. You might like to sprinkle these cupcakes with cinnamon sugar to finish.
