Chicken Posole W/Chipolte And Assorted Toppings
*2 Tablespoons extra virgin olive oil
*1 large Red Onion, peeled and chopped small
*4 cloves garlic, minced
*1 chipolte pepper, pureed
*1 red pepper, seeded and chopped
*1 yellow pepper, seeded and chopped
*1 green pepper, seeded and chopped.
*2 28 ounce cans chopped tomatoes
*3 small cans posole (also called hominy), drained
*1 rotisserie chicken, all meet pulled from bones
*4 quarts low sodium chicken stock
*1 bunch cilantro, chopped
*2 avocado, seed out, peeled and diced
*2 cups shredded cheddar
*1 large sweet yellow onion, peeled and chopped
*2 cups sour cream or greek yogurt
Heat a heavy duty stock pot. Add oil. Add onion and garlic and sauté for four or five minutes. Add peppers and saute until soft. Add stock, posole, tomatoes, chicken and chipolte and bring to a boil. Lower to a simmer and simmer 40 minutes. Add cilantro to finish. Serve with assorted toppings and crusty bread!
