Here's a remake of the egg McMuffin, a favorite of kids all over. By just changing three ingredients, you can cut a 1/3 of the calories from a traditional breakfast sandwich:

  • Use cheddar cheese that is made from 2% milk instead of regular milk.
  • Use a really good Canadian or smoked ham product - 98% fat free
  • Use one of the new English muffins that are high in fiber and made with whole grains

Calories - 300 Calories - 190
Total Fat - 12 gr Total Fat - 7gr
Chol - 260mg Chol - 225mg
Sodium - 820mg Sodium - 530mg
Carbs - 30gr Carbs - 30 gr
Fiber - 2 gr Fiber - 8 gr
Sugar - 3 gr Sugar - 3 gr
Protein - 18g Protein - 20 gr

You can make the egg scrambled and keep them to be served later. Simply fold and store in plastic. The kids can microwave to warm up while they toast the muffin.
