Red and yellow bell peppers – 1 cup
Coriander leaves – 1 bunch
Coriander powder – 2 tsp
Coriander seeds – 1 tsp
Cumin powder – 2 tsp
Curry leaves (optional) – 7
Garama masala powder – 3/4 tsp
Ginger garlic paste – 1 tsp
Green chillies – 4
Oil – as needed
Okra – 1 cup
Onions – 1 cup
Red chilli powder – 1 tsp
Salt – to taste
Tomato – 1 cup
Turmuric – 1 pinch
Cut okra into small pieces and deep fry a little bit to avoid sticking.
Cut tomatoes and bell pepper into small cubes.
Crush coriander seeds in a blender and keep it to the side.
Take a pan and add oil, cumin seeds, coriander seeds, chopped onion and salt. Mix well and then add turmeric, ginger garlic paste, cook it for 2 minutes. Then add curry leaves, green chillies and saute.
Now add tomatoes and cook for one minute, then add coriander powder, cumin powder, chilli powder, mix well and cook for four minutes until tomatoes are cooked. Now add bell pepper, sprinkle chopped coriander leaves, and finally add the fried Okra, mixing a little bit and cover for four minutes on low flame.
Once okra is cooked, add garama masala powder and mix well. Serve hot with rice.
