Meatloaf Cupcakes with Pink Whipped Mashed
Potato Frosting from Michelle's Kitchen
Meat Loaf

1 egg
1 lb lean (at least 80%) ground beef
1 cup panko bread crumbs
1 small onion finely chopped
1 tablespoon coarsely chopped parsley
1 tsp garlic powder
1/3 cup ketchup or barbeque sauce
2 teaspoons Worcestershire sauce
Salt and pepper
Mashed Potatoes
3 large potatoes, peeled, cubed
1/4 cup butter
1/4 whole milk
1/2 tsp salt
3 drops red food coloring or 2 tablespoons of juice from a jar of beets
2 tablespoons finely chopped chives for green sprinkles
1. Heat oven to 350°F. Spray 9 regular-size muffin cups with
cooking spray.
2. In large bowl, mix meatloaf ingredients with hands until well
combined. Divide mixture evenly among muffin cups.
3. Bake 35 to 40 minutes or until meat thermometer inserted in
center of loaves reads 160ºF. Cool slightly in muffin cups and
remove to a large plate.
4. While loaves are baking, boil potatoes in generously in
salted water. Cook potatoes until fork-tender.
5. Drain potatoes and return to saucepan. Add butter, salt and
1/4-cup milk and mash until creamy and smooth, adding more
milk as necessary. Add red food coloring or beet juice and mix
well. Cool potato mixture.
6. Rub hands with water or cooking spray. Using hands place 2
large spoonfuls of mashed potato mixture on cupcakes and
form into a dome shape.
7.Sprinkle with chives.
Fruit Kabobs with Honey Yogurt Dip
1/4 medium sized watermelon
1/2 cantaloupe
12-15 medium sized strawberries
25 seedless green grapes
6-10 plastic drink stirrers/skewers (Check the bar
section of the grocery store for a great selection)
1 cup vanilla yogurt
1/4 cup honey
1/2 teaspoon ground cinnamon
1. Cut rind off watermelon and cantaloupe. Let
kids use plastic knives to cut into
1-inch cubes.
2. Placing each fruit in a separate bowl have
children make patterns skewering fruit on
plastic skewers.
3. Combine yogurt, honey and cinnamon in
small bowl.
4. Place bowl on platter. Surround with skewers
and serve.
Homemade Salsa
4 plum tomatoes
1/4 bunch cilantro
2 green onions
salt to taste
1/2 lime
1 yellow pepper
pinch of cayenne (optional)
Directions:
1. Using a knife cut tomatoes in quarters. Have kids rip
tomatoes into small pieces and place in a medium sized
bowl.
2. Remove seeds and pith from yellow pepper and cut in
half. Have kids rip pepper into small pieces and add to
bowl.
3. Cut off white bulb of green onion. Have children hold
onion over bowl and use scissors to cut green onion into
small pieces.
4. Remove seeds from and have kids squeeze into bowl.
5. Have kids pull leaves from cilantro stems and cut into
small pieces with scissors.
6. Add salt and cayenne if desired
7. Mix thoroughly with hands.
8. Serve with tortilla chips. (Scoops are awesome for kids!)
