Total time: 45 minutes
10 large eggs
1 tablespoon water
1 teaspoon black pepper
¼ cup mixed fresh chopped herbs, such as parsley, dill, chives and/or basil
1 small white onion, diced
3 cloves garlic, minced
½ cup mushrooms, chopped
½ cup bell peppers, chopped
1 small zucchini or summer squash, chopped
1 cup packed mixed greens such as spinach, swiss chard or kale
½ cup low fat feta cheese
Non-stick cooking spray
Preheat oven to 375 degrees F.
Coat 3 quart baking dish with non-stick cooking spray, set aside.
In a large bowl combine eggs, 1 tablespoon water and black pepper, scramble with a fork until well combined.
Add vegetables, herbs and cheese, mix.
Pour egg mixture into prepared pan, bake for 30-35 minutes until edges are light brown and eggs are set.
Let cool for 5 minutes before cutting. Enjoy!
Tip: Substitute your favorite vegetables and herbs found at your local farmer's market such as tomatoes, green onions, leeks, broccoli or eggplant
