
For blueberry enthusiasts across southeast Michigan, a cooking class focusing all on blueberries is taking place this Thursday in Birmingham. Instructor Chef Pam Gustairs dropped by the Fox 2 cooking school to show us what you can expect to make in the class.
In this class you will celebrate the beauty and freshness of home-grown blueberries available in Michigan from mid-July through September. Blueberries are a healthy fruit that can be used to create fabulous appetizers, salads, main courses, side dishes, desserts and more. Join us as we explore the versatility of blueberries when we prepare: Blueberry Compote over Goat Cheese; Blueberry Lemon Bars; a Blueberry Coffee Cake; Chicken with Ginger-Spice Blueberry Compote and more.
The class will take place on Thursday June 28th from 6:30 - 8:30 P.M. at The Community House in Birmingham.

Blueberry Compote over Goat Cheese on Crostini
Serves 10 as an appetizer
2 cups frozen or fresh blueberries
3 tablespoons water
2 tablespoons granulated sugar
2 teaspoons orange zest
2 teaspoons orange juice
3 ounces goat cheese, softened
20 slices crostini
Directions:
1. Combine one cup of blueberries, water, sugar, orange juice and orange zest in a small saucepan. Cook over medium heat for about 10 minutes.
2. Add the rest of the blueberries and cook for 8 minutes more, stirring frequently.
3. Spread softened goat cheese over crostini.
4. Drizzle warm blueberry compote over goat cheese and serve.
