Carne Asada wrapped in soft corn tortilla

DTE Energy Music Theatre in Clarkston opened a new bar & grill called The Pine Tap this season. Their Executive Chef, Jeff Maier, stopped by the Fox 2 Cooking School to make carne asada wrapped in soft corn tortilla.
For 3 each soft tacos

3 each soft corn tortillas (warm)
6oz of thinly sliced marinated skirt steak
3oz of julienne onion
1oz of julienne hot peppers
2oz Queso fresco cheese
2TBL of vegetable oil
1.5oz of shredded lettuce
1.5 oz diced tomatoes
3oz Mexican red sauce

In a medium size pan heat half the oil and add onions cook 3-4 minutes then add your choice of hot peppers and sauté till onion are golden brown remove from pan and keep warm. In the same pan heat the rest of the oil and add the skirt steak and cook till cooked through about 1-2 minutes, and then add the onion and pepper mixture and blend.

To build the tacos warm the tortillas in a microwave with a damp paper towel on them for 30 seconds, and then fill the tortillas with the streak and onion mixture, and top with the sauce, cheese, lettuce and tomato.
