Le Chef's menu features Middle Eastern favorites such as hummus, falafel, and shish kabobs, but it also has a variety of dishes not so easily found. Enjoy tempting plates of sauteed dandelion greens, mashed fava beans, okra stew cooked with lamb shank, whole fried red snapper, and raw lamb ground with cracked wheat, onion, and spices. While some restaurants offer vegetarian options as an afterthought, Le Chef's veggie dishes are satisfying and flavorful.

BALILA
8 oz dried garbanzo beans (cooked) or 2 15-16 oz. cans of cooked garbanzo beans
we make ours fresh but that's what they're called in the store ^
2 cloves garlic minced
1 tablespoon ground cumin
1 1/2 teaspoons Lebanese red pepper
1 1/2 teaspoons salt
1/2 cup olive oil
Soak garbanzo beans in cold water over night for about 12 hours.
Drain and place in pan cover in water about 2 times the volume of beans and cook until tender for about 1 hour.
Drain and set it aside.
Combine remaining ingredients in a bowl and add garbanzo beans.
