Serves 4 entrée portions:
Ingredients
8oz Ground Turkey 99/1 lean
8oz Ground Chicken
½ Cup Salsa
1/2 Cup BBQ sauce
1 Cup Oatmeal
2T Wheat Germ
2T Ground Flax Seeds
½ Cup Bread Crumbs
2 Each Minced Garlic
5 Egg Whites
s/p to taste or Mrs. Dash.
Directions
Pre-heat oven to 350°F, in a bowl, mix eggs, salsa, and ¼ cup of BBQ sauce together. Then add breadcrumbs, wheat germ, and flax mix well. Then add turkey and chicken and mix well. Take a meatloaf pan (9 ¼ x 5 ¼ ) and spray with no stick spray, place meat mixture in pan pack well and add ¼ cup of BBQ sauce to top and wrap with foil. (Bake till internal temp reaches 160 degrees, remember carry over temperature) Let rest for 6-8 min then ENJOY!
