Granite City's Mediterranean Chicken

Get this recipe courtesy of Bryce Cocherell, culinary partner at Granite City Brewery in Troy.

7 oz Chicken breast 1 each  
Seasoning  Blend 1/2 teaspoon  
Wild rice blend 1 portion   
Blanched Broccoli 1 portion   
Tomato Onion Relish 1 #12 scoop (green)  
Grated Parmesan Cheese 1 teaspoon  
Balsamic Reduction  1/2 ounce  

Season chicken breast on both sides and place on the char-broiler skin side down
Quarter turn and flip the chicken breast when ready
Place broccoli portion in saute pan with stock heat
Place heated wild rice in the center of plate
After chicken has finished cooking place on the cutting board and remove the center cartilage
Place heated broccoli to top edge of rice with stems in and tops out (see picture)
Shingle the two half chicken breast against the wild rice presentation side up
Top with tomato onion relish
Drizzle with balsamic reduction out to outer edge of plate in 180 degrees
Garnish broccoli with parmesan cheese
Serve with a steak knife
