Former Top Chef winner Richard Blais is opening a new restaurant called Spence in Midtown.  He was recently featured in a Dr. Oz shoot in Atlanta -- working to make BBQ favorites healthier!

Recipe: Mussels with Chinese sausage and ginger beer

Ingredients:

3 lb    Mussels, washed & cleaned
1 lb    Chinese sausage
2 tbsp    chopped Vidalia onion
1 tbsp    minced garlic
1 tbsp    finely minced ginger
1 ea    lemon grass stalk, whole but slightly cracked (easy to take out later)
8 oz    Ginger beer
2 tbsp    yuzo
2 tbsp    scallions
4 tbsp    torn cilantro

Method:

In a big enough pot, add about 2 tbsp oil and sweat onions, garlic, ginger and lemon grass.  Add sausage morsels.  Add mussels and sauté lightly.  Add ginger beer cover pot until mussels barely open.  Add yuzo. Bring to a boil and add scallions and torn cilantro.
