Vaccaro's of Silver Spring Perfect Cannoli's

How about a Cannoli? A Maryland family has spent 104-years perfecting the dessert. They've been passing down the technique to make the Italian treat for generations. The family's commitment to detail is paying off.

Before many of us have even crawled out of bed, Nick Vaccaro is on the go.

His Job, "We're in the business of making people fat and happy I suppose."

Maybe you taste a Cannoli and think Italy. Nick's transported too. Not across the ocean, but back in time.

His great-grandfather started the business. Some may remember his grandfather's Italian bakery at Fourth and H northwest.

Nick says, "When I was a little boy I used to stand on a milk crate because I wasn't tall enough."
The table he was trying to reach is still in use. It was at this table that his dad taught nick the craft of Cannoli making.

"I had gone into work with him when ever I could. I really loved being with my dad."

When Nick's dad died of cancer at age 36, Nick was just 12 and knew a few things about the family business that even his mom didn't. He taught her about Cannoli. She taught him business.

He remembers showing her boxes and boxes of Cannoli.

Nick says, "I was proud of the fact that we'd worked hard and made a lot of Cannoli and I said isn't that great? And she said 'no, that's money sitting on the floor.'

Now, Nick knows all about earning dough and making dough.

When Nick bought the business from his mom, he dreamed of selling to restaurants in New York, figuring if he could make it there.

In 1997 Vaccaro's made between 5-10,000 Cannoli a week, now it's 250,000 a week.
His dad is still on the packaging. He often thinks about the Vaccaro's who've gone before.

"I wish they were here to help me to give me a few thoughts as I'm scaling and growing it. I think they'd be happy though," Say Nick.

There is another Vaccaro's, up in Baltimore. It's owned by a different family.

The Silver Spring Vaccaro's sell mostly to restaurants, but you can buy Cannoli at their factory.
